Veganuary Curried Chickpeas Sandwich Recipe.

 

Chickpeas are the most nutritious of pulses and are loaded with protein, which is vital for the healthy repair of cells.

They are also rich in antioxidant vitamin E, zinc, iron, B vitamins and fibre.

If you are vegan or trying to eat fewer animal products and need a replacement for egg in your sandwich, then curried chickpeas are the answer!

Using chickpeas in place of eggs in this sandwich is super delicious and full of easy to digest plant protein.

 

Ingredients:

a tin of chickpeas (tinned chickpeas are just as nutritious as dried ones)

1 large ripe avocado, chopped (great source of healthy fat)

a small red onion, peeled

1 tablespoon of curry powder

sea salt and black pepper

a squeeze of lemon juice

few of your favourite pickles

a handful of parsley or coriander.

Method:

Drain and rinse the chickpeas and place in a medium size bowl with the avocado, some olive oil (1 teaspoon) and lemon juice. Mash with a fork until well combined but still a little bit chunky.

Finely chop the onion, pickles and parsley and add to the chickpea mix along with the curry powder, salt and pepper.

Stir to combine and use with your favourite bread or wrap!
