What is a Superfood?

The official definition of ?superfood? is a ?nutrient-rich food considered to be especially beneficial for health and well-being”.

Leafy greens are without doubt one of the top superfoods for you to include in your daily diet. They are among the most nutrient-dense foods and are anti-inflammatory.

Superfood greens include spinach, kale, watercress, asian greens, cabbage varieties, Swiss chard.

Spinach is the best source of folate, a high folate intake can slow the ageing process as well as reduce the risk of many chronic diseases.

Kale is particularly rich in carotenoids, which play an essential role in eye health.

Kale is also terrific for vitamins C,K,B6 and calcium, potassium, magnesium, manganese.

This superfood soup is packed with all these amazing nutrients, ?tastes delicious and will fill you up without extra calories.

Kale and Spinach Soup Recipe.

Serves 2

All ingredients should be fresh and organic.

2-3 tbsp extra virgin olive oil, 1 onion, finely chopped, 4 cloves of garlic, finely chopped, 500 g fresh spinach, 300 g fresh kale (both chopped), 4 cups water or vegetable stock. Seasoning: a pinch of dried chilli flakes, half tsp ground nutmeg, sea salt and black pepper to taste.

Heat oil in large saucepan. ?Add onion, garlic and chilli, lower the heat and let stir for a couple of minutes or until softened.

Stir occasionally. ?Stir in spinach, kale and nutmeg and?gently?cook for 1 minute.

Then add water or broth and cook for 20 more minutes until the spinach and kale has completely wilted down. ?Season to taste. Serve?as it is or blend it silky smooth, both ways are delicious. – superfood soup recipe.
