Beetroot and Orange Salad Recipe.
Vibrant, colourful and full of vitamins, beets are a versatile ingredient. ?Simple flavours combine to create a refreshing and delicious salad. ?If you tried beets in the past and didn?t like them, I encourage you to try them roasted. ?Roasting brings out the sweet beet flavour.
Beetroot is high in vitamins and minerals and packed with age-defying antioxidants. ?It is also high in potassium and fibre and is a great source of vitamin C.
Chemicals in the beetroot help with the uptake of oxygen in the body, so will fire you up for your next training session.
Beetroot and Orange Salad Recipe
Serves 4
6 medium sized beetroot
2 tablespoons extra virgin olive oil
2 cups rocket
3 oranges, peeled and cut into wedges
? cup walnuts, chopped
For the Dressing:
3 tablespoons fresh orange juice
? cup extra virgin olive oil
2 tablespoons white balsamic vinegar
1 tablespoon honey
salt and pepper, to taste

Preheat oven to 190 degrees C.
Wash and trim the beetroot, put them in a foil-lined roasting tin and bake them for 30 minutes or until cooked.
While the beets are roasting, prepare the dressing by whisking together the orange juice, olive oil, white balsamic vinegar, and honey.
Once beets are done roasting, cut then into wedges and mix them together with half of the salad dressing.
You can mix two separate bowls to prevent the colours from bleeding.
Layer rocket on plate or bowl then top with beets, orange wedges, walnuts.
Drizzle with remaining dressing, as desired.
Season with salt and pepper, to taste….Enjoy!
