Asparagus Salad Recipe.

One of the first things that signals the start of spring is the appearance of fresh asparagus at local farmers’ markets and grocery stores.

We should make the most of this tasty vegetable while it is fresh and in season.

Asparagus is high in nutrients, low in calories and rich in flavor and has a wealth of health-enhancing benefits to offer:

  •  it’s a natural diuretic, encouraging the body to flash out toxins
  •  it’s rich in the flavonoid rutin, which we need to maintain healthy circulation
  •  it’s a rich source of beta-carotene, vitamin C and the antioxidant glutathione, which all lower the risk of heart      disease and cancer.
  •  it supplies numerous minerals and vitamins, including many of the B-vitamins, which play a central role in supporting brain function and the nervous system.


Asparagus Salad Recipe with fresh peas and radishes.

Ingredients for Asparagus Salad – serves 2

2 bunches of asparagus, tender tops only

1 cup fresh peas

few handfuls of salad greens

1 bunch of radishes

1 courgette shavings to decorate

handful of herbs: chives and mint.


Cashew nut dressing:  It is gluten free, dairy free, egg free and soy free.

1 cup cold pressed extra virgin olive oil

1/2 cup raw cashews (soaked for 2 hours or overnight)

4 cloves of fresh garlic

the juice of 1 lemon

pinch of sea salt.


Chop your asparagus into 2 inch pieces.  Blanch them for about 45 seconds in a pot of boiling, salted water.  Remove immediately and transfer asparagus to a bowl of ice water.  Let cool, then drain.


For the dressing – put everything in your blender and puree until smooth and creamy.

Add in more lemon juice, garlic and salt to taste until you reach your perfect blend.

In a large bowl toss together the asparagus, peas, salad greens and radishes.  Add as much of the dressing as you like and toss again.  Add fresh herbs and courgette shavings on the top.  Taste and adjust seasonings.
