Recipe With Asparagus.

One of the first things that signals the start of spring is the appearance of fresh asparagus at local farmers’ markets and grocery stores.

We should make the most of this tasty vegetable while it is fresh and in season.

In mythology, asparagus has been renowned since ancient times both as an aphrodisiac and medicinally, for its healing properties.

High in nutrients, low in calories and rich in flavor, asparagus has a wealth of health-enhancing benefits to offer:

 

 

-it’s a natural diuretic, encouraging the body to flash out toxins

– it’s rich in the flavonoid rutin, which we need to maintain healthy circulation

– it’s a rich source of beta-carotene, vitamin C and the antioxidant glutathione, which all lower the risk of heart disease and cancer.

– it supplies numerous minerals and vitamins, including many of the B-vitamins, which play a central role in supporting brain function and the nervous system.

Asparagus, Rocket and Radishes Salad Recipe

Serves 2

10 spears of asparagus, tough ends snapped                                                                                                                                                                                         1 packet of rocket salad                                                                                                                                                                                                                                 1 bunch of radishes, thinly sliced                                                                                                                                                                                                             Olive oil for coating the asparagus

For Dressing:                                                                                                                                                                                                                                                   3 tbsp of extra virgin olive oil, 1 tsp red wine vinegar or 1 tbsp lemon juice, 1 tsp french mustard, half a tsp of honey.

Sea salt and black pepper to taste.

Chop the asparagus in 4 cm long pieces and coat them in the olive oil and season with sea salt and pepper.

Preheat grill to medium-high heat.

Grill the asparagus for 2 to 3 minutes or until al dente but not soft, then remove to cool.

Mix together asparagus, rocket and sliced radishes.

For dressing mix extra virgin olive oil, vinegar or lemon juice, mustard and honey.

Season to taste and pour over salad.
