Detox Soup Recipe

Detox Soup Recipe – Curried Squash Soup.

 

Curried Squash Soup is very nutritious and is an excellent source of beta carotene.

Squash also contain vitamin C and lutein and provides you with essential electrolytes to keep you energized while you detox.

The addition of turmeric and parsley adds an antioxidant boost that also helps to support your liver.

 

Detox Soup Recipe:

Serves 3

Ingredients:

1 Tbsp. olive oil

1 onion, chopped

3 garlic cloves, minced

2 Tbsp. freshly grated ginger

1 tsp cumin

1 tsp coriander

1 tsp turmeric

2 tsp curry powder

1 tsp sea salt

Black pepper

2 butternut squash, peeled and cubed

3 cups  vegetable stock

1 cup coconut milk

Parsley and sour cream or yogurt for garnish

 

Instructions:

In a large pot heat olive oil over medium heat.

Sautee onion and garlic for 3 minutes.

Add ginger, cumin, coriander, turmeric, curry powder, sea salt and pepper.

Continue to cook for 1 minute stirring constantly.

Add butternut squash,  vegetable stock, coconut milk and cook covered on medium heat until butternut squash is soft (about 15 minutes).

Remove soup from heat and puree in blender until smooth.

Serve in soup bowls garnished with parsley and  sour cream or yogurt.
